How to Make Conchas Topping and Piping Paste

Conchas are a staple in Mexican baking, known for their soft, fluffy dough and sweet, crunchy topping. But have you ever wanted to add a bit more flair to your conchas? Today, I’m sharing a special recipe that I created for a piping paste, perfect for decorating your conchas with beautiful designs and messages.

This piping paste is made from the same topping you use to cover the conchas, with a little twist to make it smooth and easy to pipe. Whether you want to add a delicate pattern or a fun message, this paste will help you take your conchas to the next level.

Conchas Topping Recipe

Ingredients:

  • All-Purpose Flour: 75g
  • Sugar: 75g
  • Vegetable Shortening: 60g 

Instructions:

In a bowl, mix 75g flour, 75g sugar, and 60g vegetable shortening at medium speed until it forms a smooth dough.

Conchas Piping Paste Recipe

Ingredients:

  • Concha Topping: 40g (from the recipe above)
  • Vegetable Shortening: 8g-10g 
  • Food Coloring: As needed

Instructions:

In a small bowl, mix 40g of the prepared concha topping, 8g-10g vegetable shortening, and your choice of food coloring into paste. Transfer the paste to a piping bag. 

Storing

If you have leftover piping paste, you can store it in an airtight container in the fridge for up to a week. Before using it again, let it come to room temperature and mix it well to restore its smooth texture.
